Lately I have seen many fitness, paleo, and low carb chefs cooking with coconut flour. Coconut flour has an amazing nutrition profile that is high in fiber and low in net carbs along with some extra protein and healthy fats to boot. We love cooking with almond flour, but we figured we could give coconut a try to see what all the hype was.  All I can say is that I am glad we did! We decided to shake things up and buy an eggplant. The problem was that we didn’t know what to make with it though! That’s when I googled eggplant dishes and found the idea for this delicious Moroccan meal. Filled with tons of flavor and satiating fiber, one bowl is all you need to be satisfied! Okay so technically this might be considered a casserole but I like the name. Plus, we made layers so close enough! The credit for this recipe goes to Dr. Abby Ramseyer (an OB GYN who has lost weight with a Leaner Living lifestyle!) after we talked about how awesome spaghetti squash was.
